Doing Whatever We Want

This weekend wasn't your typical "holiday weekend" with BBQs, parties and swimming. In fact, I did none of those things. It was actually nice going into the weekend and not having many concrete plans. Part of me wanted to scramble and throw together some big, exciting plans last minute--- but a bigger part of me knew I needed to take whatever time off work I could to just relax, enjoy and get things done should I want to.

And that's really what we ended up doing. Movies were rented, rooms were cleaned, shopping sales happened, and of course the annual family fantasy football draft was the highlight of our weekend. Perkins even showed up! ;) After all- there's no fee to play in our league... you just win bragging rights and a homemade trophy at the end of the season. Now that I've got my lineup I am SO ready for Thursday night football this week... anyone else?!

Another highlight of the weekend was discovering these at our local grocery store. (Wow. It's sad the things we consider exciting as we get older!) 
A traditional Japanese noodle made from the Konjac plant root. Shirataki noodles have little flavor but absorb the flavors you cook with! They can be used just like regular pasta but will save you a boat load in calories and carbs. We'll be trying them out in our menu this week- so I'll be sure to update you on how they turn out. Fingers crossed.

I've realized the importance of not over-booking myself when I've got a free weekend. Okay, maybe I haven't learned it completely because it definitely still happens from time to time, but I'm doing better about making time for me (and Jared!) when we need it. At the place this year is going, I know I need to just soak up every second of every day that I can. Did you do whatever you wanted this weekend!? I sure hope so! :)

  1. Make sure you rinse the shirataki noodles well before using. When you open the package, you'll likely notice an "off" smell. I work with some Japanese and they recommended rinsing them well or the taste will be off from what you're expecting.

  3. I did exactly what I wanted this weekend! :) That fantasy poster is intense!! Glad you guys had a great time and relaxed when possible!! Can't wait to hear how the noodles are!

  12. We had the best low key weekend in months!! We did get out and about but we made plans the day of and it was so nice.
    And I can't hear about this "healthy" noodles!

  16. We went into the weekend the same way...no crazy big end of summer plans. And it was amazing! Although I also felt like I needed to do something, plan activities, etc, but loved that we just went with the flow.

  17. What store did you find them at? Always looking for better low carb options. My current fave is spaghetti squash instead of real spaghetti, but sometimes you just need that noodle texture/flavor in your life!

  20. I LOVE weekends doing whatever I want! Also, I am playing Fantasy football! I've never played before so I have no idea at all what I'm doing but for some reason I am really excited about it!! I need to try those noodles asap!!

  22. Sounds like you had the perfect low key weekend! Weekends without any plans are my favourite kind but they don't happen very often and when they do I always feel bad about not doing anything exciting. And when I am busy on weekends I feel guilty for not getting stuff done around the house. It's a lose/lose! lol.

  25. I know, I know I'm the worst and this was posted like a month ago BUT for some reason, your blog never loads at work..when I usually read (shh) so I'm playing catch up! Anyway, your team is looking pretty good up on that board! Kaepernick? Great pick! Ha! I am also very excited football is back and fall is back! And since this is a million years after the post.. did you ever make those 'noodles'? I'm dying to know!
