Mexican Monday

I made all of Twitter blow up with Mexican food cravings around 2pm last Friday. I publicly announced that it had been one month since my last taco/chips/queso binge and shocked the world. But then, shortly after the crowds died down and I assured them I'd be getting my salsa fix that evening, I realized something else. HOW ADDICTED ARE YOU WHEN YOU KNOW THE EXACT LAST TIME YOU HAD MEXICAN FOOD?! Like, down to the date and which restaurant!! I may have a problem...

So to say Friday night's dinner was delicious wouldn't even do it justice. I fasted that day in preparation of one of our favorite local joints. And of course Mexican food is even tastier when you make it a double date! We had a fun time hanging with our sibling-in-laws and having a mini-birthday-celebration for Jared.

And yes, that's the best picture of Jared and I from Friday night ;) I worked Saturday & Sunday both, but as always, still made time for tasty food, afternoon naps and plenty of good movies. Minus the whole, power going out for about 5 hours Sunday night, but that's a post for tomorrow. Thankfully we were safe and no damage to our house, so I'm definitely grateful for that!

Oh, and those Cincinnati Bengals I'm pretty partial too? Yeah, we're 7-4. #WHODEY!

  3. I've got a recipe for you. I've just discovered it and you must try it. Take medium (don't do large, it's a pain) flour tortilla and rub extra virgin olive oil thinly over the entire tortilla. Season lightly with whatever seasoning you like.. I used garlic powder and cavender's greek seasoning, cut in chip slices, and bake at 350 for 10 minutes. You will be addicted to these yummy chips! They are the biggest hit at my house. We literally at an entire bag of flour tortillas in one day (between three of us).

  4. I'm OBSSESSED with Mexican too! I can literally eat it for every meal...not a problem right? So glad you got your fix and so glad you are all safe from the terrible weather yesterday!

  8. Ha! We all have our obsessions. I checked into Nando's peri peri on foursquare (a local chain that I LOVE), and a pop up said I'd checked in 20 times that month. I panicked until I realized it was total check ins and not just at Nando's...but it's a problem that I consider it a plausible scenario.

  9. I can totally relate to a mexican addiction---I could easily eat it for every meal. I just made up a 'recipe' last week to fix me and hubby's cravings without giving into a pile of nachos: cook a spaghetti squash and scrape it out so you have all the fake-spaghetti strands, mix in abouttt a whole jar of salsa, some shredded or chunked chicken, some black or pinto beans, chopped jalapenos if you want to add some heat, some shredded cheddar, and cumin. Mix it all together and throw it in a greased casserole dish, top with more shredded cheddar, and bake till it's all hot and the cheese is melted. (Sorry, I never measure so just do everything based on your best judgment haha) It was so so good!

  11. Your Mexican food addiction sounds like my pizza addiction. I've been trying to only have it once a week because for some weird reason, my fiance can't eat the same food every day of the week? Strange... ;)

  14. Glad you didn't have any storm damage - we escaped it, too. Sucks about the power outage but at least it was relatively short-lived. And I'm glad you got to have some fun amid all the work!

  17. The picture that showed up for this blog was the one of Caleb and Kayla. So, there I was, reading this entire blog on my phone thinking I was reading Kayla's blog. And I was so confused why Kayla would say that was the only picture of her and Jared all night and why she was talking about a tweet she never tweeted. Aye, aye, aye! It's Monday.

  29. I don't blame you for knowing the last time you ate Mexican food. It's a must in my life, too. Also, WHO-DEY?! I was actually at the game with my boyfriend as an early birthday gift from my parents! So many bizarre things happened, but I loved it!
