Happy September!

Happy month of September, and happy Labor Day! I hope you don't have to be at work today, as I am feeling SO lucky to not be in my office right now. Some years we have today off, some years we don't so I'm taking full advantage of my day off and the extended weekend.

Friday Jared and I had dinner together and visited our favorite local grocery store. Yes, yes a grocery store on a Friday night doesn't exactly make us "cool" but we don't care! Besides, I guarantee if you look at the store's website you'll be jealous you don't have one near you ;)
And for the record, no, we didn't purchase those jumbo bags of rice. I just thought it was so funny how they came packaged in a cloth(ish) bag that zipped closed and can be reused! We did gather up all the ingredients for my day of meal prep ahead of me.

Saturday Jared was gone most of the day with multiple fantasy football drafts so I dedicated most of the morning to meal prep. I've done a little bit of freezer cooking before, but usually it involved me just doubling or tripling one recipe to freeze and use later. This time, I managed to prep and store 4 different recipes at once. In just 90 minutes I prepared approximately 10-12 meals for Jared and I!
It was honestly a blast! I'm going to try to do this at least one time a month, and maybe work my way up to MORE recipes at a time as I get better and more efficient. Since the fall is such a crazy time for us, it's going to be really nice to have yummy, healthy food at our fingertips for those days where we just can't find the time or energy to cook.

And as if that wasn't enough excitement for one day? I got to celebrate my cousin's sweet boy at his first birthday party. It truly feels like just yesterday I was at their house meeting him for the first time…. hard to believe he's a little toddler now and not a teeny baby!

Today (weather permitting) Jared and I are going on a fun lil' date that I've been looking forward to for months. Cheers to the long weekend!

  4. Can you share your meals? I'm looking to do something like that, I don't have a deep freeze (yet) but I can get a lot into ours now. It be a lot easier to pull out and do than cook on a daily basis :)

  8. I'm loving Jared's picture in the store and large bags of rice are always good for a photo op! I wish we had the kitchen space for good meal prep and the freezer space too. Once I start working, it's going to be hard to have things prepared for Rob but I'm sure I will figure something out. PS- your cousin is such a cutie patootie!
