What We've Been Up To

If anyone missed Sallie and Perkins yesterday, they wanted us to pass on their apologies and let you know that they promise to be back next week. They were super busy being awesome and helping us revamp our "master" bathroom. Master gets quotes because if you've ever lived in a tri-level you know those bathrooms are generally TINY. It's been an eyesore and an inconvenience ever since we bought the house 2+ years ago. So when a sale at Home Depot + giftcards + a "damaged" item matched up right, we jumped on in. Now tell me, that HAS to be the smallest vanity you've ever seen in your life….
I have never been happier. That mini-vanity and baby mirror are long gone and there is a beautiful new set in it's place. I will say, that sucker was not as easy to get out as we'd hoped. It was so old and parts were so corroded that it took some serious muscles and sweat--thank you, Jared. I'll show you more later once we've added the finishing touches of some cute decor. Let's just say, I am one happy homeowner right now!
I've been really getting excited about baking/cooking again lately. It's finally becoming a habit for Jared and I to eat at home for almost every meal! Meal prepping has become easier and we plan way better than we used to. You know, prior to getting into the whole crazy budget thing. If anyone posts a weekly meal plan on their blog, PLEASE share them in a comment. I love reading ones like Jenn's and Alexa's. They always have great, nutritious ideas!
Last night Jared and I whipped up some DELICIOUS zucchini "fries" and I was a sad, sad gal when they were gone. So many of you blew up my Instagram with drool, I figured I'd share our super-easy recipe!

You'll Need:
2 zucchini's
1 egg white
1/4 cup milk
1/4 cup Parmesan cheese
1/4 cup breadcrumbs (We used Italian style)

Preheat oven to 425 degrees. Cut zucchini into about 3 inch sticks. Fry-like, if you will ;) Whisk your egg white in a small bowl and add milk. Combine cheese and breadcrumbs into a separate bowl. Dip zucchini sticks into egg mixture and then roll in breadcrumb mixture. Coat a baking sheet with cooking spray, place zucchini on sheet and bake for about 30 minutes or until golden brown.

We served ours with a delicious maranara sauce- yum, yum!!

  6. Caleb and I grilled up some eggplant last night and I ate it by itself separate from my salad...DELISHHH! Yayy for nutrition!! :) can't wait to see the vanity in person tonight. Woo!

  7. There is so much in our house that I want to fix/redo. You know your getting "older" when you ask for new light fixtures and a fan for your birthday...which is exactly what I did this year. hehe Can't wait to see what y'all did to it.

    We cook all the time at home, usually only eating out once a week, twice at the most on the weekends when we are busy busy. I don't usually post recipes because people sometimes don't like to see them but maybe I should start. I know I like getting ideas.

    My bathroom is effing horrifying.

    I always wondered why people put those dinky vanities in bathrooms. I mean, what can you even put on them other than soap and MAYBE a toothbrush holder.
